This is the short list of brands I reach for when the product can change the texture, flavor, structure, or stability of a recipe. I am not precious about every pantry staple, but I am particular when the ingredient does real work.

The first brand listed is my preference. The options underneath are tested choices I also like, in order, so the recipe still feels possible if your store does not carry my first choice.
